CORNED BEEF MUSUBI
What are your thoughts on SPAM? While I can't say I love the meat product dearly, I do find my palate tuned to the unique combination found in musubi. The Hawaiian dish pairs a slice of SPAM with sushi rice and some toasted seaweed, it's SPAM sushi. Hints of that dish find their way into my version of corned beef hash, made with long grain rice instead of potatoes. I fried my beef with scallions, mustard, soy sauce, and rice vinegar to make a powerful morning breakfast. Add a fried egg and it's a feast.
INGREDIENTS PER PERSON
3 tablespoons Sesame Oil
1 Scallion, minced
2-3 thick slices Corned Beef, chopped
3/4 cup Cooked Rice
1 teaspoon Whole Grain Mustard
1 teaspoon Soy Sauce
A Splash of Rice Vinegar
BUSINESS
Add the oil to a hot pan and wait for it to shimmer (this may be instant).
Toss in the minced scallion and stir fry for a few minutes, until it has some color.
Add the chopped corned beef and fry for a few minutes until heated through.
Add the rice and stir fry for another few minutes until everything is well mixed.
Add the mustard and soy sauce, stir fry to combine.
Add the vinegar and remove from the heat.
Top with a fried egg, if you like.
